First Recipe

I LOVE breakfast food.  So, that has been the first thing I've wanted to attack as I change to no sugar living.  So far I've done a lot of boiled wheat with honey and almond milk, eggs & bacon, and a few sugar free whole wheat pancake recipes.  Friday morning I made some delicious whole wheat bran muffins.  I basically found a recipe and adapted it with honey and wheat flour.

Whole Wheat Bran Muffins
2 c. wheat bran (unprocessed)
1 c. butternmilk
1 egg
2/3 c. honey (can reduce if desired)
1/3 c. olive oil
1/2 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. whole wheat flour

Directions:
1. Mix buttermilk with wheat bran and let sit for 10 minutes.
2. Mix together eggs, honey, oil, and vanilla.  Add to buttermilk & bran.
3. Sift together and then add dry ingredients...just until moistened.
4. Bake at 375 for 15-20 minutes.

  1. Don't be scared of dinner!!! I have a few suggestions that you can take or leave. :) Buy a really nice wok and then make a ton of stir-frys. It makes vegetables the star of your meals and makes dinner prep super fast. Also--if you season things with lemon juice, you don't need to add a whole lot of other flavorings.

    Also, check out an American Heart Association cookbook from your library. Or look at their recipes online. They have some super yummy recipes and they are all really healthy.

    And last tip. Check out some vegetarian cookbooks. They have the best veggie recipes that really help out in the healthy eating department. They also have some super yummy desserts that are much less sugar laden than typical.

  2. Thanks, Ans. I'll be contacting you for yummy recipes. So far the vegetarian cookbooks have not thrilled me (or my kids)...so I'm leery and unsure where to start. We love stir fry stuff.
